Taco Soup

This is a recipe that my Grandma has made for years. Every time I make it, it reminds me of home and is as yummy as ever. The best part; it's cheap, easy, and the boys LOVE it! It also makes a giant portion and is good to store in the freezer for those nights when ya just don't feel like cookin!

Here's what you need:

2lbs. lean ground beef (Substitute beef for ground turkey for lighter option)
2 onions diced
1 (27 oz.) can kidney beans
1 (15 oz.) can garbanzo beans
1 (8 oz.) can whole kernel corn
1 (15 oz.) can pinto beans
1 (27 oz.) can whole diced tomatoes
1 cup water
1 tsp. beef bouillon
2 pkgs. taco seasoning
1 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. oregano
2 jalepeno peppers diced (optional- but recommended)

In a large pot add ground beef, onions, and jalepenos. Cook until beef is brown, drain fat. Put meat back in pot and add all cans (juices included) of beans, corn and tomatoes. Add water, bouillon, taco seasonings and spices. Bring to boil and simmer for two hours. This recipe can also be done in a crock pot. Just brown beef first and then toss everything in the pot. Cook on medium for one hour and then turn to high for two more hours.

Serve with grated cheese, sour cream and tortilla chips. Delicious!
